Black Bean, Quinoa & Citrus Salad


I stumbled across this recipe a few months ago and have been dying to try it. It combines so many of my favorite things like avocado, cilantro and grapefruit. Plus, I feel like it must be somewhat healthy. I made a few modifications like cutting the olive oil in half, doubling the grapefruit and adding sunflower seeds, red bell pepper and cumin. The outcome was great - it was a light, refreshing salad for a muggy summer night here in Atlanta and as an added bonus, it was great for lunch the next day as well.
